I like hot dogs, but I don’t rarely crave a hot dog unless I can load with a bunch of other goodies. Then I crave hot dogs. Cooking a hot dog over the campfire is a tradition for most camping trips, but my family likes to liven up our hot dogs with all sorts of toppings. We’ve made everything from Chili Cheese Frito Dogs to Nacho inspired hot dogs, but our latest hot dog recipe creation with grilled peppers, pulled pork and pico de gallo may just take the cake.
Before I head out for a weekend of camping, I try to prep all the parts of a meal that require a bit more attention such as chopping vegetables. For this recipe I cut all of the vegetables and made the pico de gallo ahead of time. A few days before hand I made the pork in the crock pot and shredded it. We had multiple meals with it before we even left for the campsite! To make it easier, you could also buy pre-made pulled pork.
If you’re cooking over a campfire, just oil up a cast iron pan and throw in your vegetables to saute on the grate while you cook your hot dogs over the campfire. This creation truly came from an experiment and having some leftover food in the fridge to finish up. But the whole family loved this pulled pork hot dog recipe. Meat on meat, it doesn’t get much better than that!
- 8 all beef hot dogs
- 8 hot dog buns
- ½ red pepper, sliced
- ½ yellow pepper, sliced
- 2 cups pulled pork
- Salsa, optional
- 1 tomato, chopped
- ½ onion, chopped
- 3 tablespoons cilantro, chopped
- 2 green onions, chopped
- 1 jalapeno, chopped
- ½ tsp garlic powder
- salt and pepper, to taste
- In a bowl, combine tomato, onion, jalapeno pepper (to taste,) cilantro and green onion. Season with garlic powder, salt and pepper. Stir until evenly distributed.
- Cook hot dogs either over the campfire or on the grill
- Scoop about 2 tablespoons of the pulled pork on to the hot dog, cover with grilled peppers and pico de gallo. You can also add salsa if you would like.
