Breakfast is our favorite meal of the day, especially when camping. There is nothing better than getting up early, starting a fire and making a nice hot breakfast to start your day. We love using our pie iron because it is so versatile from breakfast to dessert there are so many delicious options. We like to get creative and have come up with this great pie iron breakfast recipe to liven up your morning.
This spicy sausage with scrambled eggs has become a go to camping breakfast for us. It is easy to make and adds a nice spice to the morning with a kick of salsa. We are always looking to prepare as much food ahead of time so that we can actually relax when out camping and this meal is no different. We cooked the sausage and scrambled eggs ahead of time. Just put it in a container in the cooler and it is ready to use when you need it.
SPICY SAUSAGE AND SCRAMBLED EGG PIE
1 lb Chorizo
½ teaspoon chili powder
½ onion, chopped
7 tablespoons of milk
2 packages crescent rolls
½ cup Shredded cheese
2/3 cup salsa or pico de gallo
Salt and pepper to taste
Cook the sausage with the onion in a pan. Season with chili powder, salt and pepper. Drain any fat. Set the sausage aside. In a bowl crack the 8 eggs, add 7 tablespoons of milk with salt and peper to taste. Mix the eggs and pour in to a pan to scramble. Once complete add the sausage with onions to the pan and heat through.
Spray the pie iron with cooking spray. On a plate roll out the crescent rolls, use 2 rolls and shape on to one side of the pie iron, put your sausage and egg mixture on the crescent roll, add a few tablespoons of salsa and cheese. Cover the mixture with 2 other crescent rolls and push down on the edges of the rolls to connect. Put the pie iron in the campfire for 3-4 minutes per side or until golden brown. Enjoy!
