Raspberry Thyme Toddy

It’s believed hot toddies have medicinal qualities. Whether they do or don’t, this one is absolutely delicious combining the tea with the sweet Chambord and the savory thyme. If all medicines were this good there’d be no problem getting people to take theirs.
  • 12 cups water
  • 6 dark tea bags (use your favorite; we used Earl Gray)
  • 1 lemon, sliced thin
  • 1 large orange, sliced thin
  • ½ cup regular white sugar
  • 1 Tbsp. cloves
  • 12 sprigs fresh thyme
  • 1 ½ cups raspberry liqueur (Chambord for example)
  • 1 ½ cups bourbon whiskey
  • ¼ cup fresh-squeezed lemon juice
  1. Bring the water to boil in a large pot. Reduce to simmer.
  2. Add tea bags, lemon slices, orange slices, sugar, cloves, and sprigs of thyme. Cover and simmer for 10-12 minutes.
  3. Pour in Chambord, bourbon, and lemon juice. Stir well. Return to very low heat, just to keep the mixture really warm. A preheated crockpot works really well for this.
  4. Preheat thermos(es). When they are ready, pour out the water and add a small portion of the solids (lemon and orange slices, cloves, and thyme sprigs) to each thermos.
  5. Then fill with the hot liquid. Seal immediately. Pour gently into warm mugs over another fresh thyme sprig (optional) to serve.
