Bacon, Pecan and Apple Salad

  • 6 cups red leaf lettuce, washed and torn
  • 1 sweet apple, diced
  • 4 slices bacon, cooked and crumbled
  • 4 tbsp pecans, toasted
  • 1 chicken breast, cooked and cut in strips
For the dressing:
  • ½ tsp diced garlic
  • 2 tsp dijon mustard
  • 2 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • salt & pepper, to taste
  1. In a small bowl, combine all of the ingredients for the dressing and set aside.
  2. Place all salad ingredients into a large bowl. Toss dressing with salad and serve.
