I love to go camping and I also love to cook. So as I plan a camping trip the daily menu is very important to me. Plus we all need to eat and no wants freeze dried meals 3 times a day.
It doesn’t take long to get sick of oatmeal and cereal and crave a heartier meal. While camping you need all the energy you can get from your breakfast if you plan on hiking, swimming and being outdoors all day long. This Ham & Potato Skillet is one of the best breakfast camping recipes I have made and always goes over well with the family and other camping guests. Plus it is so super easy and does not take a lot of prep work at the campsite.

Ham & Potato Skillet
HAM & POTATO SKILLET

INGREDIENTS:
8 oz package diced ham (can be found in deli meat section)
2 cups Potatoes O’Brien with onions and peppers
3 tbsp vegetable oil
8 eggs
8 tbsp milk
1/2 cup shredded cheese
1 tsp garlic salt
salt & pepper to taste
INSTRUCTIONS:
In a pan add 3 tbsp of vegetable oil, medium high heat. Add Potatoes O’Brien and cover. Add salt, pepper and garlic salt. Cook for 6 minutes, flip the potatoes and add the package of diced ham, cover and cook for another 6-8 minutes.
In a separate mixing bowl crack the eggs, add 8 tbsp of milk, salt and pepper to taste. Whip the mixture until all the yokes are broken.
In a separate pan add the egg mixture, as the pan gets hot, scramble the eggs. Once the eggs have been scrambled add the ½ cup shredded cheese. Combine the eggs and cheese with the ham and potatoes o’brien mixture. Enjoy!
