Eating an exclusively plant-based diet is incredibly healthy but can be a struggle when it comes coming up with tasty recipes constantly. The struggle is even greater when planning vegan meals for a camping trip. That’s why we’ve come up with 10 Easy Vegan Recipes to help our vegan campers out! We adapted most of these recipes for camping and also added tips for preparation, making them easier to cook at the campsite.
1. Tofu & Broccoli Stir-Fry
My family LOVED this dish. This recipe calls for broccoli as the vegetable but you can add just about any combination of vegetables that you like; I suggest adding shiitake mushrooms. We found that it’s easiest to combine the broth, sherry, soy sauce, cornstarch, sugar and crushed pepper ahead of time and bring it in a small sealed container. Cutting the tofu and putting into a separate container, also eases the amount of prep work at the campsite. Using a third sealed container of the salt and cornstarch that coats the tofu is also an option. We thought that this made the whole process a lot quicker and made it smoother out at the campsite. 2. Savory Orange-Roasted Tofu & Asparagus
Everything about this dish was to die for. For this one, we obviously didn’t have a conventional oven out in the woods but we used a dutch oven. We have found, for this recipe, using 22 coals on the top and 11 on the bottom works best. We prepared the tofu, miso (sesame ginger marinade works if you can’t find miso), vinegar, and oil ahead of time. Keep the tofu separate until cooking at the site. 3. Vegan Pancakes
This one is super easy and the pancakes were super tasty! All we did beforehand was combine the 4 dry ingredients – flour, sugar, baking powder, and salt. It just makes breakfast time so much easier when you’re not grabbing for the flour and other jars of ingredients. Click here for the recipe.
4. Smoky Charred Cauliflower and Potato Soup with Kale
This soup recipe was amazing. We actually made this whole recipe ahead of time and all we had to do was heat it up at the campsite. There’s a couple different options you can choose from to heat it up, we chose a cast iron pot on the grate that goes over the campfire coals. You could also use a pot on a camp stove, or a dutch oven. This would make for an awesome dinner in the fall or on a cool spring night. Click here to get the recipe.
5. Creamy Fingerling Potato Salad
This potato salad was an awesome side dish for lunch and dinner. Beforehand we did all the cutting of the potatoes, shallots, capers, celery, and parsley leaves. It makes for a better meal to just boil the potatoes on site so the potatoes are fresh and not a day or two old. Click here for the recipe.
6. Toasted Oatmeal with Maple Syrup, Cranberries, and Raspberries
This is a very simple recipe, and that is why we love it. Sometimes you just don’t want to make an elaborate meal for breakfast. It is so simple that nothing really needs to get prepared ahead of time. This is a very healthy and delicious breakfast meal out in the woods. Click here for the recipe.
7. Vegan Burgers
These burgers took some time to make, but it was well worth it. We prepared the burger in advance, combining all ingredients, except the breadcrumbs. You will want to wait until you are ready to cook the burgers to add breadcrumbs as it can become soggy. Find the full recipe here.
8. Caramelized Onion and Mushroom Panini with Sun-Dried Tomato Mayonnaise
My family loves panini’s, so this recipe was a hit. We found that it was easiest to cook the onions and mushrooms ahead of time. We combined the mayonnaise, lemon juice, tomatoes, and garlic in a food processor at home and put the mixture into a sealed container. For this, we used the campfire panini press (much like a pie iron, but for panini’s).Click here for the recipe.
9. Grilled Vegetable Panini
We loved this recipe because of how easy and fast it was. The only prep work this recipe entailed was slicing the fresh veggies. Fresh ingredients are the key to an amazing traditional panini sandwich. Our campfire panini press was the perfect tool to use for this. Unlike a traditional pie iron, the panini press uniformly compresses the sandwich as it toasts, without being cut off the edges. Click here for the recipe.
10. BBQ Seitan and Peaches
This recipe is definitely a must try. To help with the prep time, all we did was put the peaches and the seitan cubes on the skewers at home and packed those away in a cooler. This is awesome for a mid-summer dinner served with a side of fresh corn or salad! Click here for the recipe.
