Foil Packet Stuffed Potato

We’re assuming as melted cheese drips down your fingers, there’s a big smile on your face. That gooey, deliciousness oozing everywhere is a sign of a successful melted creation. We’ve all had a loaded baked potato where you pile on the fixings, but have you had a stuffed potato? If not, you’re in for a treat. Making slices in the potato allows you to stuff the goodies inside of the potato to all melt together. A perfect meal to throw over the coals of the fire, this loaded potato is full of gooey cheesy goodness, bacon and pulled BBQ pork. Really, what more could you ask for?

Foil Packet Stuffed Potato

The possibilities are endless when cooking with foil packets and make for an easy camping meal. Foil packets are simple to throw on the coals of the fire or pop on the grill and make clean up a breeze. Cooking is all about experimentation and that’s exactly how this stuffed potato came about. We just decided to pile it on with all of the things we loved – bacon, cheese, pulled pork. But that’s the beauty of the creation, it can be substituted easily for the favorite toppings in your life.

We like to have a few things ready to go before we head out to the campsite, just to make life easier. So we cooked up the bacon and chopped our green onions. But overall its a simple enough recipe to complete at the campsite. Everyone got to stuff the amount of toppings they wanted in to their potato making it super fun for the kids. Plus they were delicious, which made everyone smile.

Ingredients
  • 4 potatoes
  • 8 slices bacon, cooked and chopped
  • 1 ½ cups shredded cheese
  • 1 cup Lloyds Pulled BBQ Pork
  • 2 tbsp green onions, chopped
  • sour cream, optional
  • Tin foil
Instructions
  1. Wash and dry the potatoes. Make slices in the potato about ¼ inch apart. Don’t slice all the way through stop about ¼ inch from the bottom.
  2. Stuff a ¼ cup of cheese and 2 slices of chopped bacon in to the slits of each potato. Top with ¼ cup of Lloyd’s Pulled BBQ Pork and 1 tbsp of shredded cheese.
  3. Grease a piece of tin foil and lay the potato in the middle. Wrap the potato in tin foil and put on the hot coals or on the grill for 25-30 minutes. Checking a few times for doneness. Open the foil pack and top with green onions and sour cream.
