Foil Packet Meatball Sub

The meatball sub is one of my favorite toasted sandwiches. I remember as a little kid thinking that meatballs on a sandwich would be disgusting. I’m glad I grew up, faced my fears, and tasted this deletable sandwich. I have made meatball subs at home plenty of times, but wanted to find a good sandwich recipe for the campsite. Especially one that I could feed to a group. After some research and trial and error, I found a great way to easily make a meatball sub for larger group.

Foil Packet Meatball Sub

If you have read any of our other recipes, you know that preparation of food before leaving for the campsite is high on the list of priorities. Knowing what you are going to eat and having some of the leg work done is makes camping about 1,000 times better. I found out the hard way that relying on your fishing abilities for a meal is just not a good idea. I almost always make my own meatballs at home, I just prefer to have them fresh. But for camping, using the frozen meatballs just makes a little easier – even when you are prepping at home. If I am getting things ready before hand I always use the slow cooker for the meatballs. If you are preparing it all at the campsite, use a cast iron pan over the fire or a camp stove to get the meatballs and sauce ready.

To make this easy for a group, we used a large french bread loaf, sliced it in half lengthwise and stuffed it full of goodies. If you are preparing the meatballs at home, fire up that crock pot and throw in the meatballs and sauce ingredients. If you are cooking at the campsite, use a skillet to heat up the meatballs and sauce – it will take about 15-20 minutes. Once completed you can arrange the meatballs along the bottom half of the sub. I like to cut them in half, it just makes assembling the sandwich easier. Cover the meatballs with sauce and cheeses. Put the top half of the loaf on and wrap it in tin foil. Use the campfire coals to cook the meatball sub. Place the packet in the fire and let cook for about 10 minutes or until cheese is melted and it is nice and toasty. Then, slice in to about 6 sandwiches and watch everyone enjoy the ooey gooey masterpiece.

I originally found this over on the Feeding Mr. Picky blog and have kept the ingredients mostly the same but changed it up to fit a group and a camping environment.

Ingredients
  • 25-30 meatballs, frozen or cooked
  • 1 (16 oz.) can tomato sauce
  • ½ tsp granulated onion
  • ½ tsp Italian seasoning
  • ½ tsp dried basil
  • 2-3 cloves garlic, crushed
  • 1 Tbs brown sugar
  • ½ cup mozzarella cheese
  • 2 tbsp parmesan cheese
Instructions
  1. Take a large french bread loaf, and slice it in half lengthwise.
  2. If you are preparing the meatballs at home, fire up that crock pot and throw in the meatballs and tomato sauce, onion, italian seasoning, basil, garlic and brown sugar on low for 4 hours. If you are cooking at the campsite, use a skillet to heat up the meatballs and sauce mixture- it will take about 15-20 minutes.
  3. Once completed arrange the meatballs along the bottom half of the sub. I like to cut them in half, it just makes assembling the sandwich easier. Cover the meatballs with sauce and mozzarell and Parmesan cheese. Put the top half of the loaf on and wrap it in tin foil.
  4. Use the campfire coals to cook the meatball sub. Place the packet in the fire and let cook for about 10 minutes or until cheese is melted and it is nice and toasty. Then, slice in to about 6 sandwiches and serve.
