Foil packet meals can make a camping experience much more enjoyable. No messing with pots and pans just put it in tin foil and let it cook. I love to make fish but it can be messy sometimes, especially at a campsite. But after some trial and error I found this is an easy foil packet fish recipe that the whole family can enjoy!
If tilapia isn’t your thing you can certainly use other fish. Maybe you even have a fresh catch from the day! Another reason I really love this recipe is the ability to do most or all of the preparation at home. You certainly could assemble each foil packet and just keep in the cooler. But it is also easy to have all of the vegetables cut up and in a baggie, just pull them out, put the fish in the tin foil and cover with the veggies and you are ready to get cooking!
To keep the meal simple while camping I usually pair it with instant mash potatoes or potatoes in tin foil (click here for recipe) that can cook while the fish is cooking.
EASY FOIL PACKET TILAPIA & VEGETABLES
4 tilapia fish filets (or any white fish)
2 Green Peppers, sliced
8 oz sliced mushrooms
2 Zucchini, sliced
1 lemon, sliced
Lemon & herb seasoning
If frozen thaw tilapia according to package directions. Slice the green pepper, zucchini and lemon. Tear off two pieces of tin foil that will be big enough to wrap the meal. Lay them on top of each other, shiny side down. Take a small amount of butter and grease the tin foil where you will be laying the fish.
Lay the fish in the middle of your tin foil, sprinkle with lemon & herb seasoning. Pile a quarter of the green peppers, zucchini and mushrooms on to the fish in the middle of the tin foil. Take 2 lemon slices and squeeze over the meat and vegetables. Bring the ends of the foil together and seal shut. Do this for the rest of the fish filets.
BAKING: Pre-heat the over to 425 degrees, place the foil packets on a baking sheet and bake for 15 minutes. The vegetables will be steamed and soft and the fish flaky. Let cool and serve.
GRILL: Place the foil packets on a hot grill and close lid. Grill for 15 minutes. The vegetables will be steamed and the fish flaky. Let cool and serve.
CAMPFIRE: Make sure to use heavy-duty aluminum foil, place the foil packets in the hot coals and let cook for 15 minutes. The vegetables will be steamed and the fish flaky. Let cool and serve.
